在乾隆年间，有一位在宫廷三品官以上都晓得的“鸡神”吉梦鳢，是当时乾隆年间御史、太仆寺卿、顺天府尹吉梦熊字毅扬的同宗兄弟，因做鸡而得名，他做的鸡当时只有皇帝、王爷、贝勒以及三品以上大员才得以口福。

吉梦鳢做鸡，以优质仔鸡或民养蛋鸡为本，褪毛、洗净、去内脏后，再以山泉水、葱姜、黄酒反复浸泡，再以天麻、人参、枸杞、桂圆、杜仲、香菇、冬笋及花椒、大料、桂皮、茴香、葱姜等开胃健身的辅料加上汤，然后用质纯无的炭火(旺火)烧沸后再用微火煨五、六个小时，然后再捞出控干，放在当时制造的馕坑内用梨木、柏叶、果壳、茶叶，并在坑壁加少许沉香烘制而成，三次熄火、三次火烘，让热气由内向外渗出，三温三热六道工序，遂称”烘鸡“，据说吉梦鳢做烘鸡时，皇帝下令不得夜里烘制，原因是他的鸡做好开炉后异香充满整个皇宫，后宫之人顿醒而起，吉梦鳢做的”烘鸡“不仅味道奇绝，其造型，两腿盘起，爪入鸡膛，双翅经脖颈由嘴中交差而出，鸡状呈卧，色泽金黄，远远望去似鸭浮水，口衔羽翎，又似凤翔，十分美观。烘鸡肉香而嫩，且无渣骨酥、清淡高雅、味透骨髓、鲜奇滋补，曾被当时的乾隆封为“宫廷神鸡”，并下旨不得流于民间。同时恩赐吉梦鳢家人可居于宫中，当时曾被像印度、高丽好多外国的宫廷仿制，就这样吉梦鳢一代传于一代，一直传到清末，做法经过不断改进，一代比一代做的味道更好，清朝灭亡后吉梦鳢后人后一名“烘鸡”传人因为战乱就流落到了广西巴马，一直居住于巴马一个山中，一直无儿无女，也就认养了现在的吉爷“阿吉”，将一生“烘鸡”绝学传给了养子阿吉，阿吉一生未娶，一生就以山林为伴，终日做鸡，自己养的鸡从来不卖，就把它做成“烘鸡”，很多村里老人。吃阿吉老人的“烘鸡”较长的有几十年，从来不要钱，很多村民每当中午就会闻道山里“烘鸡”的缕缕奇香，后来村民们劝阿吉老人回到村里，老人执意不肯，后来就在山里为老人建了一座阁楼，并经常送去养好的鸡让阿吉老人烘制，每逢村里有重大节日或婚宴都要请阿吉老人做烘鸡，久而久之村民对阿吉老人也特别尊敬，都尊称他为“吉爷”，从此村里就流传一句话“宁愿丢牛一头，不舍烘鸡一口“的说法。

松褪毛去内脏洗净后，将鸡反复拍打，使其整体肉质松软。

泡然后先用水反复浸泡去其血水、腥味、后用矿泉水加以”葱、姜、料酒“泡制数小时

煮每煮，需配以加上头锅的老汤，如此沿袭，越老越好。且炖鸡有肉香，炖肉有鸡味，妙不可言，再加以天麻、人参、枸杞、桂圆、杜仲、香菇、冬笋及花椒、大料、桂皮、茴香、肉蔻等草本以及辅料用老汤，才会初具奇香，营养滋补。
